HIGH - FIBER MUFFINS

1/2 c. unprocessed bran
1/2 c. boiling water
1 egg, slightly beaten
1/2 c. firmly packed brown sugar
1/4 c. vegetable oil
1 1/2 tsp. vanilla extract
1 c. buttermilk
1 1/4 tsp. baking soda
3/4 c. raisins
1/3 c. chopped pecans
1 1/4 c. whole wheat flour
1/4 tsp. salt

Combine 1/2 c. bran and boiling water in a small bowl, set aside. Combine egg, brown sugar, oil and vanilla in a medium mixing bowl. Combine buttermilk and soda, stir in well; add buttermilk mixture, raisins and chopped pecans to brown sugar mixture, mixing well. Combine whole wheat flour, bran and salt in a large mixing bowl. Add buttermilk mixture and bran and water mixture, stirring just until moistened. Spoon into greased muffin pan. Bake at 350 degrees for 15 or 20 minutes. Makes 1 1/2 dozen. You can double the recipe and freeze extra muffins.
